Quinoa Tabbouleh Salad


Try this amazing back of the package recipe next time you want a fresh side dish that is easy to make. This comes from Simply Nature Organic Quinoa: Super Grain of the Andes. It’s easy to make, has good protein and is low on the glycemic index.


Ingredients 1 cup organic quinoa 2 cups water 1 cup peeled and diced cucumber 1 cup cherry tomatoes, halved 1 cup chopped parsley ¼ cup crumbled feta cheese (or more) 2 Tbsp. Kalamata olives 1 Tbsp. chopped mint 1 Tbsp. Olive Oil 1 Tbsp. lemon juice 1/8 tsp. salt

Directions

  1. You may need to rinse the quinoa (check your bag/brand).

  2. Combine ½ cup quinoa with 2 cup of water in a pot. Bring to boil

  3. Reduce heat to low, cover and simmer for 15 minutes

  4. Turn off heat and let sit, covered for 5 minutes.

  5. Chill quinoa (or cool slightly for room temp version)

  6. While quinoa chills or cools, in a bowl combine ingredients from cucumber to mint.

  7. Combine olive oil and lemon juice

  8. Add quinoa to the other ingredients

  9. Toss with olive oil and lemon and salt.
