Quick Chili (Low Carb|Keto|Gluten Free)
This chili is loaded with ground beef and full of flavor. It's the easiest healthy weeknight dinner that the whole family will love!
1 Tablespoon refined coconut oil or olive oil
3 cloves garlic pressed or finely chopped
1 large onion finely chopped
1 lb ground beef
1 to 1 1/2 tablespoons chili powder
1 teaspoons ground cumin to taste
1 10-ounce can RO-TEL
1/2 cup beef broth
sea salt to taste
Heat up olive oil in a dutch oven or large pot over medium/high heat. Add garlic and onion and cook until it just begins to brown (about 8 minutes).
Lower heat to medium, add ground beef and a large pinch of salt. Cook until it begins to brown, stirring every so often (5 to 7 minutes). Add in all the spices and cook for a couple more minutes until fragrant.
Add RO-TEL and continue to cook over medium heat until it begins to simmer. Lower the heat to low and continue to cook for 15 minutes, stirring every so often.
Add in the beef broth and continue to cook for 1 to 3 hours. (The longer you cook it, the more flavorful it gets! It is terrific the second day too!
Let the chili rest for 10 minutes prior to serving. Top with avocado, cheese, sour cream, chopped onions and jalapenos or your favorite toppings.
This is a versatile recipe. Have fun adding additional veggies such as red or green pepper, celery or mushrooms.
