Creamy Cucumber Salad (Keto|Low Carb|Gluten Free)
This light, fresh, and healthy Creamy Cucumber Salad pairs perfectly with just about any summer meal. Best of all, it's easy to prepare, and you probably already have all of the ingredients that you need.
1 tablespoon sour cream
3 tablespoons mayo (for Keto, use your favorite compliant mayo)
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 teaspoon sugar (I use classic monk fruit for keto)
1/2 teaspoon Himalayan or sea salt
1 large cucumber, peeled and thinly sliced (English cucumbers work well here but any kind will do)
½ medium sweet onion, thinly sliced
In a jar or mixing bowl, whisk together mayo, sour cream, olive oil, sugar, vinegar, and salt.
Chef's Note: A 1/2 teaspoon of finely chopped or pressed garlic adds a nice flavor.
In a separate large mixing bowl, toss together cucumbers and onions.
Pour sour cream mixture over top and mix together.
You can either serve it right away or chill for about an hour before serving.
It's delicious the next day too.
