Pumpkin, Yogurt, Granola Parfait

This is an easy healthy snack or breakfast.  If you make it ahead, add the granola when ready to eat to keep it crunchy.  You can easily make the pumpkin mixture ahead of time and assemble it when you are ready to serve.

This makes 2-3 servings.  Takes about 10 minutes to make.


Pumpkin, Yogurt, Granola Parfait

Ingredients

  • 1 Banana – as ripe as possible. 

  • 1 Cup unsweetened pumpkin puree

  • 1 1/2 Cups plain Greek yogurt, divided – use coconut milk for a dairy free alternative.

    • You can use flavored yogurt which will make the recipe sweeter.

  • 1 Cup milk, again, use a dairy free alternative as needed.  Oat milk works well here.

  • 2 Tablespoons honey or maple syrup.

  • 1/4 Teaspoon ground cinnamon or Pumpkin Pie spice, or Apple Pie spice

  • 1/4 Teaspoon salt

  • Your favorite granola – go for low sugar, Cascadian Farms has options like Blueberry Vanilla or you can make your own.  Here is an option from Cookie and Kate you might want to try.

Instructions

  1. Pumpkin layer: add the banana, pumpkin puree, 3/4 cup of the Greek yogurt, milk of choice), ground cinnamon (or pumpkin pie spice) and salt to a blender. Puree until smooth.  I use a bullet mixer to combine.  You could use a wand mixer if it’s all you have.

  2.  Layer this mixture into 3 or 4 bowls or serving jars

  3. Add a layer of yogurt,

  4. add granola

  5. Repeat with all 3 layers.
