Pumpkin, Yogurt, Granola Parfait

This is an easy, healthy snack or breakfast. If you make it ahead, add the granola when you're ready to eat to keep it crunchy. You can easily prepare the pumpkin mixture in advance and assemble it when you're ready to serve.

Delicious Pumpkin Yogurt Granola Parfait Recipe
This recipe makes 2-3 servings and takes about 10 minutes to prepare.
Ingredients
1 Banana – as ripe as possible.
1 Cup unsweetened pumpkin puree.
1 1/2 Cups plain Greek yogurt, divided – use coconut milk for a dairy-free alternative. You can also use flavored yogurt for a sweeter taste.
1 Cup milk – use a dairy-free alternative as needed. Oat milk works well here.
2 Tablespoons honey or maple syrup.
1/4 Teaspoon ground cinnamon or pumpkin pie spice, or apple pie spice.
1/4 Teaspoon salt.
Your favorite granola – go for low sugar. Cascadian Farms has options like Blueberry Vanilla, or you can make your own. Here is an option from Cookie and Kate you might want to try.
Instructions
Prepare the Pumpkin Layer: Add the banana, pumpkin puree, 3/4 cup of Greek yogurt, milk of choice, ground cinnamon (or pumpkin pie spice), and salt to a blender. Puree until smooth. A bullet mixer works well, but you can use a wand mixer if that's all you have.
Layer the Mixture: Divide this mixture into 3 or 4 bowls or serving jars.
Add Yogurt Layer: Add a layer of yogurt on top of the pumpkin mixture.
Add Granola: Sprinkle granola over the yogurt layer.
Repeat Layers: Repeat the layering process with the remaining mixture until all ingredients are used.
Serve and Enjoy: Enjoy your delicious parfait!
